Eatser Breakfast Casserole- Noel

1 package sausage links
6 English muffins, cut into 1 in. cubes
1/4 cup butter, melted
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup chopped onion
1/2 cup chopped red pepper
12 eggs
2 cups milk
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup bacon bits



Cook sausage according to direction. cool slightly & cut into 1/4 in. slices. Place English muffin cubes in a greased 9x13 pan. Drizzle with butter. Layer with sausage, cheese, onion, and red pepper. In a large bowl, combine the eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate over night.



Remove from refrigerator 30 minutes before baking. Uncover and bake @ 350° for 45-50 minutes or until a knife inserted into the center comes out clean. Let stand 5 minutes.

Crepes- Heidi

4 eggs
1 cup flour
2 Tbsp sugar
1 cup milk
¼ cup water
1 Tbsp butter, melted then lightly cooled

Mix four and sugar in bowl.  Mix milk and water in another bowl.  Beat eggs.  Then beat in melted butter.  Add dry mix and wet mix a little at a time to egg mixture while beating.  Refrigerate batter overnight for best results. (The Gobles don't always refrigerate overnight and they turn out fine. I'm sure Heidi is cringing over that.)

Add a little milk to consistency desired.  Heat frying pan to medium heat.  Pour on THIN layer of batter.  When top looks dry, flip to cook other side.  (These cook really fast, but they’re devoured as fast as you can make them!)

Top with fresh fruit and whipped cream. (The Gobles like to top them with maple syrup and powdered sugar.)

Pancake/Waffle Batter- Spencer


1 cup milk
1 egg
Pinch of salt
1 Tbsp baking powder
1 Tbsp vegetable oil
1 cup flour—more as needed

Mix ingredients together and cook as desired.  (For the 5 of us we double the recipe.)
